South Beach Casino Hosts Icelandic Ukrainian Buffet

   The Culinary Federation Winnipeg had their first fall meeting at South Beach Casino on Wednesday, September 11th.

 

   Hosted by Chef Garren Kumps, the Icelandic and Ukranian Chefs served a fantastic array of traditional dish’s representing their ethnic roots.

 Cabbage rolls, perogies, pickled herring , Beet Salad, Potato pancakes, and Tarragon Chicken gave us the best tastes of Ukraine. On the Icelandic side we feasted on Rullapilsa, Pönnukökur / Pancakes, and suberb Vínarterta. The centre piece of the buffet was a towering mixed grill featuring luscious Lamb Chops. On this cornucopia of food, there were too many dishes to mention, all of them expertly prepared.

   The evening was highlighted by the culinary competition reflections of two of our members, representing the viewpoints of todays and yesterdays chefs.

   Young Chef J.P. Buxton shared some stories about his experience as the Manitoba competitor in the national Young Chef Challenge this last May in Edmonton. His experiences were enlightening for the young chefs who were in attendance . J P looks ahead to other competitions such as the Bee Maid student competition next month.

     We also had a chance to look back down the road of culinary excellence with the Presentation of the Canadian Culinary Federation Honor Society Membership to Chef Raymond Czayka. Chef Raymond has met the extensive criteria required for membership and was accepted to this level of culinary excellence at the last convention. Raymond shared some of the highlights of his thirty year long career and offered encouragement to the working chefs in attendance.

   The Culinary Federation Winnipeg is most appreciative to the staff and management of the South Beach Casino for hosting this evening of delicious sharing.
